Translated as "Dragon Well" from Chinese, Long Jing is one of the most popular green teas in China. The plants grow on the upper slopes of the Tieh Mu mountains.
The tea can be recognized by the way it is folded into a characteristic sword-like shape.
It has a delicate fragrance, a slightly sweet flavor and a silky texture. The liquor is velvety and its chestnut aroma lingers for a long time in the mouth.

Infusion
Color: khaki green and yellow
Fragrances: planty, mineral, toasted, chestnut
Liqueur
Color: golden yellow
Texture: the astringency throughout the mouth gives it a good presence and length
Flavors: acidity and light bitterness
Aromas: a planty attack with exotic fruits, a few toasted (roast chestnut) and pronounced mineral notes
Aromatic profile and length in the mouth: long aniseed planty notes, with a hint of artichoke. A lovely balance between the aromas, textures and flavours
Suggestion of preparation
To prepare hot tea:
With the tasting set: infuse 4 minutes in filtered water at 170°F / 75°C.
With the Gong Fu Cha (teapot/Gaiwan): infusions during 30-40 secondes.
To prepare latte tea:
Infuse 8g / 0.3oz of tea in 1 cup of hot milk and 1 cup of 195°F - 90°C water for 5 minutes.
Discover the delicious pairing of Long Jing with sauced fish such as pollock, cod, rock salmon, and monkfish. It goes well with goat cheese, such as Crottin.
