This exceptional tea is the result of extensive know-how and outstanding work. Its leaves have been hand-rolled then placed one by one in a frame covered with a cloth to which a small roller is applied to flatten them.
This immaculately produced spring green tea reveals highly complex vegetal, floral and nutty notes. A rare tea!
"Tai Ping" is the name of the county where this tea is produced, province of Anhui. Tea plantations are often shrouded in a persistent mist, creating ideal conditions for the concentration of fragrances. The leaves grow slowly, allowing the most delicate aromas to develop.
After plucking, the leaves are meticulously sorted, keeping only the most precious parts of the plant (the remaining leaves are used for other teas). A special handmade process is then used to make tai ping hou kui: the fresh leaves are quickly heated in a wok (~100°C, 212°F), then undergo alternating heat sources and drying periods. The leaves are then placed between two sieves and carefully flattened using a small roller.
Tai ping hou kui is distinguished not only by its particular terroir and climate, but also by its carefully executed and distinctive processing method. Marks from the manufacturer are visible on its large and flat leaves.

Prepare this tea warm:
With the teapot or the tasting set: 4 minutes in water heated to 75°C / 170°F.
With the gong fu cha: infusions during 30-40 seconds.
Prepare this tea iced:
In a teapot or a carafe: infuse 8 g of leaves per 50 cL of water at room temperature for 30 minutes. Remove the leaves and store in the fridge.
