Tea-Infused Crêpes: The Universal Recipe

Ingredients

- 3 tsp of tea or herbal tea of choice

- 8.8oz (250 g) of flour

- 17 fl oz (500 ml) of milk

- 4 large eggs

- .7 (20 g) of granulated sugar

- 1.1oz (30 g) of melted butter

Preparation

    1| Heat the milk and butter in a saucepan until simmering (just before boiling). Remove from heat, plunge the tea (or infusion) into the milk, and let it steep for 10 minutes. Strain the mixture to remove the tea leaves.
    2| In a large bowl, whisk together the eggs, sugar, and flour. Gradually pour the infused milk into the mixture, being careful to whisk constantly to prevent any lumps from forming with each addition.
    3| Once the batter is smooth and fluid, you can begin cooking the crêpes in a non-stick pan.
    4| Enjoy with a tea-flavored jam or any other topping of your choice!
