Ingredients

-0.18 oz (5 g) of Tahitian Rooibos

-6.8 fl oz (20 cl) of filtered water

-10 fl oz (30 cl) of tonic water

-1 tbsp of almond syrup

-1/2 of vanilla bean (or 1/2 tsp of vanillas bean paste or liquid vanilla extract)

Preparation

    1| Steep the Tahitian Rooibos in water heated to 195°F for 30 minutes, adding the scraped seeds and the pod of the vanilla bean. Let it cool, then refrigerate.
    2| Pour the chilled infusion and the almond syrup into a cocktail shaker filled with ice. Shake vigorously for 1 minute to ensure the vanilla is perfectly blended throughout the drink.
    3| Strain and divide the mixture into 4 long drink (highball) glasses.
    4| Fill the rest of the glasses with tonic water.

Tasting Advice

To highlight the vanilla notes of this cocktail, take the used vanilla pod, slice it lengthwise into 4 thin strips, and garnish each glass with a vanilla "spear."
