Hypnotic! The vibrant green swirls of this matcha and vanilla marble cake make it the perfect centerpiece for afternoon tea or a gourmet breakfast. It is soft, sweet, and approachable: the ideal treat for those who might be hesitant about the natural bitterness of matcha.

Ingredients

- 1 tbsp of matcha powder of your choice

- 3/4 cup + 1 tbsp of all-purpose flour

- 3/4 cup + 1 tbsp of powdered sugar

- 1 1/2 tsp of baking powder

- 5 tbsp of unsalted butter, melted

- 3 large eggs

- 1 tsp of vanilla bean paste (or vanilla extract)

Preparation

1| Set your oven to 350°F.
2| In a large bowl, whisk together the eggs, flour, baking powder, powdered sugar, and melted butter until the batter is smooth. Divide the batter equally into two separate bowls.
3| Sift with a strainer the matcha powder into the first bowl and mix until the color is uniform.
4| Add the vanilla paste (or extract) to the second bowl and stir well.
5| Grease a loaf pan. To create the marble effect, alternate pouring scoops of the green and white batters into the pan. You can gently swirl them with a knife for more "hypnotic" patterns.
6| Bake for 20 minutes at 350°F, or until a knife inserted into the center comes out clean.
