Matcha Tiramisu

Light, comforting, and exotic: just a few words to describe this matcha tiramisu. It is as simple to make as it is delicious to eat! With its beautiful soft green hue, this dessert is sure to convert anyone to the wonders of Japanese green tea powder.

Ingredients

- 1 1/2 tbsp of matcha powder of your choice

- 3 large eggs

- 1/2 cup + 1 tbsp of powdered sugar

- 1 cup of mascarpone cheese

- 10 ladyfinger biscuits

- 1 pinch of salt

Preparation

    1| Whisk a strong, matcha powder using 1 tbsp of matcha powder and 5 tbsp of water heated to 160°F
    2| Quickly dip the ladyfingers into the matcha liquid (don't let them get too soggy) and line the bottom of your serving dish.
    3| Separate the egg whites from the yolks. In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
    4| In a separate large bowl, beat the egg yolks with 1 1/2 tsp of sifted matcha and the powdered sugar for 2 to 3 minutes until pale. Gently whisk in the mascarpone until smooth.
    5| Using a flexible silicone spatula, gently fold the beaten egg whites into the mascarpone mixture until just combined and airy.
    6| Pour the cream mixture over the soaked ladyfingers, smoothing the top with your spatula.
    7| Refrigerate for at least 4 hours, though leaving it overnight is preferred for the best texture.

Tasting Advice

For even more umami depth, use a fine-mesh sifter to dust a fresh layer of matcha powder over the tiramisu just before serving.
