Joie Green Tea Florentines

This winter, what if you indulged in some tea-infused delights? Perfect for sharing at a festive gathering or giving as a thoughtful gift, these decadent Florentines are a celebration of the unique and aromatic notes of our newest creation, Joie. With hints of almond, toasted buckwheat, and cacao, these are delicious bites to craft and savour with the ones you love.

Ingredients

- 1 tsp (5 g) of Joie tea

- 1.8 oz (50 g) of sugar

- 1.2 oz (35 g) of crème fraîche

- 1 tbsp (35 g) of lavender honey

- 0.3 oz (8 g) of salted butter

- 3 drops of natural vanilla extract

- 0.7 oz (20 g) of toasted buckwheat (or kasha)

- 2.6 oz (75 g) of sliced almonds

- 2.1 oz (60 g) of 70% cacao dark chocolate

Preparation

    1| Preheat your oven to 350°F (180°C).
    2| Heat 100 mL of filtered water to 185°F (85°C).
    3| Steep the Joie tea in the water for 10 minutes, then strain.
    4| Pour the strained, steeped tea and the sugar into a heavy-bottomed saucepan. Bring to a boil over medium heat and cook for 5 minutes, until the mixture becomes syrupy.
    5| Add the crème fraîche, honey, butter, and vanilla extract. Continue to cook for another 5 minutes.
    6| Remove from the heat, then gently stir in the almonds and buckwheat, taking care not to break the almonds.
    7| Spoon the mixture into the bottom of small silicone molds. For the crispiest Florentines, make sure the layer is thin.
    8| Bake in the oven for 15 minutes, until the edges are golden brown. Let them cool completely before unmolding.
    9| Melt the chocolate in a double boiler. Dip the flat side of each Florentine into the melted chocolate, then place on a sheet of parchment paper to set at room temperature or in the refrigerator.
