Matcha Waffles and Whipped Cream

Matcha is the ideal ingredient to reinvent classic pastry recipes. Its emerald green color, umami flavor, and subtle herbaceous note bring originality and vitality to snack time!

Ingredients

For the Whipped Cream:
- 10 fl oz (30 cl) of heavy whipping cream

- 1 oz (30 g) of powdered Sugar

- 1 tsp of Matcha


For the Waffles:
- 7 oz (200 g) of flour

- 1½ tsp of baking powder

- 1 pinch of salt

- 3 large eggs

- 1 plain yogurt

- 2 oz of unsalted butter

- 3 tsp of Matcha

- 5 tbsp of water

Preparation

    The Whipped Cream
    1| Place the heavy cream in the freezer for 30 minutes.
    2| Sift and mix the powdered sugar and 1 tsp of matcha powder together.
    3| Whip the very cold heavy cream until it holds stiff peaks.

    The Waffles
    1| In a large bowl, whisk together the flour, baking powder, and salt.
    2| Add the eggs and yogurt, then mix in the melted butter.
    3| Sift the remaining matcha powder (3 tsp) to avoid lumps.
    4| Dilute the matcha in the water until you get a consistency similar to crepe batter.
    5| Incorporate the diluted matcha mixture into the main batter. Let the batter rest in the refrigerator for 30 minutes.
    5| Pour the waffle batter into your waffle iron. Cook following your appliance's instructions.
    6| Serve the waffles topped with the matcha whipped cream and garnish with seasonal fruit.

Serving suggestion

You can also prepare plain whipped cream to go with the matcha whipped cream and add sugar to your taste.
