In Chinese Oolong means “black dragon” and refers to the very dark color taken on by the leaves during drying. There are two main categories of Oolong: lightly oxidized teas (“Chinese Method”) (up to 30% oxidation), and the more oxidized oolongs (60-70%) from Taiwan. Water temperature: 205°F Steeping time: 5-7 minutes
